Samantha Zola always loved the idea of rainbow cookies but “knew they needed a revamp.”

The resident of our Central Islip complex began making them when she moved to Miami with her husband, and she began to feel homesick. Thinking of the sweet commonly found in New York deli’s, she spent her time away from Long Island making traditional rainbow cookies.

“They used to be made in the Italian flag colors, from immigrants that came to New York,” Zola explains, “But the Jewish community has really adopted them also.” These days, they’ve become a New York staple, and are easily found at many Jewish bakeries, Long Island diners, and other quintessential NYC locations.

Upon moving back to New York, Samantha opened up her own ecommerce rainbow cookie company “Zola Bakes,” and brought her own unique taste to the pastry – introducing new colors, new flavors, and sensational toppings.

Zola Bakes rainbow cookies are far from conventional. With a fresh look, better flavor, customizable colors, and various fillings, you won’t be able to have just one. Samantha has even begun combining the cookies with other desserts. Rainbow-cookie stuffed brownies and rainbow cookie cakes are among her crowd favorites. Next, she’s looking to incorporate other New York deli cookies – the Black and White cookie and some variants of sprinkled cookies are on her list.

“I just really want to upgrade New York classic cookies and give them a makeover,” she says. “They have a lot of potential.”
